May Recap

I really can't believe May is over, Bug will be 2 in just a few short weeks. The year really does go by fast once you have kids!


There is an awesome park that we love to go to. Daddy and Bug love sliding down the slide together. Daddy probably enjoys it more ;)


Bug also played with some friends at the park!

I just had to share this! It's the cutest, future prom picture?

On Mother's Day, we went to the San Antonio Zoo.



And we tried to take pictures, but with an almost 2 year old, they have a mind of their own!
 


 Summer is definitely here, so we headed to a splash pad close by.
We tried out a new splash pad which was pretty nice. Notice the picture above, she can't be getting tired of my picture taking yet because she has a long way to go!




And we spent a lot of time playing outside with Bugs' water table. Next month is going to be so busy for us, but I'm looking forward to see my baby girl progress in age even though it's bittersweet.

Cake Batter Cookies

In case you don't know, I'm obsessed with cake batter. Actually, that's an understatement. I like love anything sweet. (My biggest problem while trying to lose more weight!) Anyways, I made these awesome cookies for work and everyone enjoyed them. If you love cake batter and cookies, you'll love them too ; )

  
Ingredients:
  • 1 box french vanilla cake mix (I use Duncan Hines)
  • 1 tsp baking powder
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1/2 tsp vanilla extract
  • sprinkles (optional)
Instructions:
  • Preheat oven to 350 degrees. In a large bowl, mix together the cake mix and baking powder. In another bowl, mix together eggs, oil and vanilla. Add the egg mixture to the cake mixture and stir until combined smoothly. Stir in sprinkles if you wish. Drop a spoonful of batter onto a cookie sheet. Bake for 10 minutes. Let cool and enjoy!

No-Bake Energy Bites

If you're on Pinterest, you've probably seen these floating around. Well, I made some and they are delicious, but without sticks of butter and with lots of healthy ingredients! Even if you get a sweet tooth, these will cure it.


 
Ingredients:
  •  1 cup (dry) oatmeal (I used old-fashioned oats)
  • 2/3 cup toasted coconut flakes
  • 1/2 cup peanut butter
  • 1/2 cup ground flaxseed
  • 1/2 cup chocolate chips
  • 1/3 cup honey
  • 1 tsp. vanilla extract
Instructions:
 
Stir all ingredients together in a medium mixing bowl. Let chill in the refrigerator for 30 minutes. Once chilled, roll into balls of whatever size you desire. Store in a container and keep refrigerated up to 1 week.

Happy Mother's Day

In my 2 years of motherhood, I've learned a lot:
Sometimes you have to do what's best for you and your child, not what's best for everybody else. I've made many decisions that people may not agree with. I encouraged co-sleeping, we did not use the CIO method, and I will not spank.
Spending time with your children is more important than spending money on them. Sure, it's nice to spend money, but they will remember the memories you share far more than the money spent.
You will never have this day again with your children. We've hit the toddler stage and everyday is unpredictable. There are going to be bad days just as there are going to be good ones, but breathe and notice that today is a gift.
The best security blanket a child can have is parents who respect each other. This is probably the best advice I was given and it makes total sense. Children will watch the way their parents treat each other and they will one day grow up to reenact the same behavior they were taught.
When in doubt, choose the kids, there will be plenty of time later to choose to work. I've actually refereed to this when thinking about taking a more heavier work load and by far, choosing to spend quality time with my girl was far more rewarding.
Kaelyn Elizabeth, my greatest wish is that you always know how much I love you, and you walk through your life knowing that I'll always be there for you whenever you need me.
